Bifteki are Greek meatballs stuffed with sheep's cheese. Combine ground meat, finely diced onion, egg and bread crumbs. Season to taste. Moisten your hands and form small balls, flatten slightly and put crumbled sheep's cheese in the center. Reform to small balls or small rolls and ensure to completely embed the cheese. Heat olive oil in coated pan and brown meat balls on all sides until crispy. Reduce heat and fry for another 7-8 minutes. Serve with flat-bread and tzatziki.
