Farmers Breakfast & Pickled Herring

potatoes
margarine, unsalted
onion
diced smoked ham
pepper, salt
ground red pepper
eggs
pickled herring
pickled cucumber

Serves 3 - 441 cal per serving
Prep-time: 20 min. - Total-time: 60 min.
Cook the potatoes in the skin, let cool. Peel the potatoes and slice. In a frying pan heat 10g / 1/3 oz margarine and fry the diced onion and diced bacon. Remove from the pan and put in a bowl. Heat the remaining margarine and fry the potato slices. Season with pepper, salt, and paprika. Add the prosciutto and onion to the potatoes. Stir carefully. At last add the eggs and stir. Serve with pickled herring and pickles.
