Beef Broth

marrow bones

--> Beef Roulades
For beef broth put the beef boiling meat and the marrowbones in a pot with cold water and bring to a boil. Skim off the foam. Season with onion, cloves, bay leaf, pepper corns and salt. Simmer the meat for about 2 hours. 30 minutes before cooking time is over add the cleaned and finely cut greens. Cook the noodles (e.g. vermicelli) for the soup in a separate pot and add to the beef broth shortly before serving. Cooking the noodles in the broth would make the broth cloudy. Remove the meat and the bones from the broth. Cut the meat in bite sized pieces and put back in the beef broth. You can easily prepare the beef broth a day ahead. In this case add the noodles and the vegetables on the day of serving. If the beef broth is cooling down in between you can easily remove the fat which solidified on the surface of the broth. You can also freeze the broth.
