It's best to prepare Home-Style Herring one day ahead. Thoroughly rinse the pickled herring and soak in milk for about an hour. If you use fresh herring soak in water over night. Disembowel the herring and gut. Cut open the back side and remove bones and skin. For the sauce combine whipping cream, sour cream and mayonnaise. Peel and core a tart crisp apple and cut in thin slices add to the sauce. Finely slice the onion and dice the pickle; add to the sauce. Season with bay leaf, white wine vinegar, sugar, mustard seeds, juniper berries, pepper and salt. Remove the pickled herring from the milk and cover with the sauce. Cover and let stand in the refrigerator for 24 hours. Serve the home-style herring with jacket potatoes.
