Peel and slice the apples and then cut them into small pieces. In a medium bowl mix flour, baking powder, baking soda, cinnamon, vanilla sugar, chopped almonds and apple pieces. In a second bowl wire whisk the egg, sugar, oil and the buttermilk. Add the flour mixture to the egg-buttermilk mixture. Stir just enough to combine and wet all Ingredients. Don't overmix, otherwise gluten develops and the muffins become dry and hard. Fill the dough in a well-greased muffin pan and bake for 20-25 min. at 350 F. Remove from the oven and let stand for 5 minutes, then remove the muffins carefully from the pan. They taste best while they are still warm.
