Cut the pork spareribs in 6 servings. Rinse the ribs with water and dry thoroughly with paper towels. Season well with pepper and salt. Squeeze the lemon and put the lemon juice in a small pot. Add the soy sauce and the sake (Japanese rice wine) or sherry. Add honey and ketchup to the sauce. Season with sambal oelek (sambal oelek is an Indonesian ground fresh chili paste, it's very hot). Peel the ginger, cut in small pieces and mince using a garlic press. Add to the sauce. Bring the sauce to a boil stirring constantly. Put the pork ribs in a bowl and cover with the sauce. Let marinate for about an hour; turning the ribs frequently. Put the ribs in a special aluminum platter used for grilling. During grilling constantly baste the ribs with the sauce.
