Colorful Pasta Sauce

yellow bell pepper
green bell pepper
red bell pepper
onion
Garlic
olive oil
Chili pepper
tomato paste
basil
thyme
oregano
vegetable broth
pepper, salt
cream
milk
sheep's cheese

Serves 3 - 564 cal per serving

Cook the Penne al dente. Cut the bell peppers in half, remove seeds and cut in small cubes. Finely chop onion and garlic. In a coated skillet heat olive oil and slightly fry the vegetables. Don't let them get brown! Cut the chili pepper in half, remove seeds, cut in fine stripes and add to the vegetable mix. Add tomato paste and stir. Coarsely chop the fresh herbs and add to the pasta sauce. Pour in vegetable broth. Season with freshly ground black pepper and salt. Let the pasta sauce cook for 5 minutes to concentrate. Stir in cream and milk. Shortly before serving sprinkle the crumbled Feta cheese over the pasta sauce and garnish with basil leaves
