Peel the cucumber, half lengthwise and remove seeds. Dice cucumber and put in a bowl. Add crumbled sheep's cheese (e.g. sheep milk feta). Peel red onions, quarter and cut in stripes. Finely chop dill and peppermint
leaves; sprinkle over salad. Make a dressing from olive oil and freshly squeezed lemon juice. Season with freshly ground black pepper, salt and a pinch of sugar. Pour the dressing over the salad and toss. Serve the Cucumber Salad With Sheep Cheese well chilled.
