Serves 3 - 514 cal per serving
Prep-time: 30 min. - Total-time: 60 min.
Chili con Carne tastes best if warmed up. Put kidney beans and corn in a strainer and rinse with water until water runs clear. Let drain thoroughly. Finely dice onion, 2 garlic cloves and greens. Fry with olive oil until golden. Add ground meat and fry. Season with paprika, salt, thyme, bay leaf and chili powder. Lengthwise halve the chili pepper and remove ribs and seeds; finely dice and add to the chili con carne. Pour boiling water over the tomatoes, peel and dice. Add to the chili con carne and stir. Add the tomato paste (1 can equals about 70 g / 2 1/3 oz) and fill with broth. Add kidney beans and corn. Let cook on medium heat uncovered for 30 - 40 minutes. Stir once in a while. Serve with baguette, corn bread or farmers bread.
