Use the milder and smaller shallots for preparing 'Balsamic Onions'. Peel the shallots and halve. In small coated pan heat honey and butter. Add shallots and steam for about 2 minutes on medium heat. Stirring once in awhile. Season with pepper, salt and thyme. Cast on dark balsamic vinegar. Let cook on low heat for 5 minutes; stir occasionally. 'Balsamic Onions' go well with game dishes as well as a side for BBQ.
