Enjoy the Greek Cauliflower Salad as a side dish with grilled meat or just as a salad. Bring salted water to a boil in a large pot. Remove stalk and clean cauliflower. Using a large slotted spoon transfer cauliflower into pot with boiling water. Reduce heat to medium and cook cauliflower al dente, about 15 minutes. Remove cauliflower using a slotted spoon and drain well. Divide cauliflower into flowerets and transfer to a salad bowl. Mix a marinade from olive oil and freshly squeezed lemon juice. Season with freshly ground black pepper and salt. Finely chop parsley and add to the marinade. Pour marinade over cauliflower and toss carefully to mix.
