Usually this recipe is prepared with a special top fermented dark beer called 'Altbier'. If you can't get Altbier use dark beer instead. Use ripe strawberries for the Dark Beer Cooler, rinse them, pad dry and remove leaves and stem. Cut the bigger strawberries in half leave smaller ones as they are. Put the strawberries in a large pitcher or a large glass bowl and mix with the sugar. Cast on 1 bottle of well-chilled dark beer, cover and let stand for about 1 hour. Right before serving the Dark Beer Cooler cast on the second bottle of dark beer. Fill up with 1/2 bottle of sparkling wine.
