For making the butter cookies put flour in a bowl, on top allot the cold unsalted butter in small flakes. Add powdered sugar and egg. Cut a vanilla bean open lengthwise and remove the pulp using a small spoon. Add to the other ingredients in the bowl. Also add a pinch of salt and lemon zest; knead until a smooth dough result. Shape dough into a ball, wrap in plastic foil and refrigerate for 45 minutes. On a slightly floured work surface roll out the dough until 1/2 cm / 1/5 inch thick. Using different cookie cutters cut out cookies; put on a baking tray lined with parchment paper. Pre-heat oven to 200 C / 390 F. Bake the butter cookies on the middle rung for about 10 minutes until golden. Mix egg yolk with water and brush on butter cookies. Sprinkle with fancy sugar sprinkles (e.g. nonpareils), chopped pistachios, chopped almonds, coarse sugar or chocolate sprinkles.
