Nigiri Sushi With King Prawns

For making nigiri sushi with king prawns look out for good quality and only buy very fresh king prawns. Put the sushi rice in a colander and rinse with water until the water runs clear. Put the sushi rice in a small pot and add the water. Season with sugar and salt, cover and bring to a boil. Reduce the heat to low and let the rice soak covered for about 20 minutes. Put the sushi rice on a plate and season with rice wine vinegar. Wet your hands and form small pieces of rice and put them on a sushi board. If necessary remove the black gut. Using a Japanese knife or a sharp kitchen knife lengthwise cut in the prawns on the bottom side, don't cut through! Fold them open. Add a few drops of water to the wasabi powder and make a paste. Thinly spread the wasabi paste on the bottom side of the prawns. Put the prawns with the wasabi side down on the rice, slightly press on. Serve the nigiri sushi with king prawns with wasabi and pickled ginger. On the side serve 3 small bowls with soy sauce. That allows everyone to season the nigiri sushi with king prawns to his taste.
