Buesum is a village in Schleswig-Holstein, Germany. It is situated on the North Sea coast. Buesum is a therapeutic sea bath and also well known for it's tideland walking tours, grassy beaches and famous north sea shrimps. The north sea shrimps are sand shrimps and smaller in size. darker in color and have a distinctive flavor. Most suitable for this recipe are north sea shrimps but as a matter of course you can use other shrimps as well. Put the shrimps on a bowl. Cut off three lemon slices. Cut each slice in unto the middle and tuck on the rim of a cocktail glass or small salad bowl. Squeeze remaining lemon and marinate shrimps in lemon juice. Whisk cream stiff and combine with tomato ketchup, creamed horseradish and brandy. Season with a pinch of cayenne pepper and salt. From the butter lettuce just use the small and tender leaves. Rinse the lettuce leaves and dry using a salad spinner. Arrange the lettuce leaves in the cocktail glasses or small salad bowls and put the shrimps on top. Shortly before serving pour the cocktail sauce over the shrimps. Garnish the 'Buesumer Shrimp Cocktail' with fresh parsley.
