Chicken Saltimbocca is a very juicy and spicy dish through the use of italian Parma ham. Cut the chicken breast into four pieces and gently flatten it. Season chicken with fleur de sel and freshly ground pepper and wrap each piece with a slice of Parma ham. Place a leaf sage on each piece of Chicken Saltimbocca and pin it with a wooden skewer. Heat up a pan with olive oil and fry the Chicken Saltimbocca for about 10 minutes, turn frequently. Meanwhile, cut the cherry tomatoes in half, add them to the pan after 5 minutes and season lightly. Serve with fresh white bread or ciabatta.
