Avocado with eggs is easily cooked in the oven. Small eggs are most suitable for the avocado. Preheat oven to 180 C / 356 F. Cut the Avocado lengthwise and seperate the two halves from the stone by a circular motion. The easiest way to remove the stone from the flesh is by pricking the stone with a knife, using it like a lever. Now you deepen the avocado-halves with a spoon. Crack the small eggs open into the formed immersion. Put your combination onto a baking sheet and bake on the middle rack for 18-20 minutes. Season the avocado just before serving with freshly ground pepper and salt. Best served with fresh baguette.
